It’s our go to item every in the fall, winter, spring and summer.  Elderberry syrup.  It’s yummy.

Some have duct tape, we have elderberry syrup and vinegar.  It’s our answer to everything.

Elderberry syrup is used for its antioxidant properties.  It is used to improve vision, boost the immune system, lower cholesterol, and is great for coughs, colds, flu, bacterial and viral infections.  Bioflavonoids and other proteins in the syrup destroy the ability of cold and flu viruses to infect a cell. People who have the flu who took elderberry syrup reported less severe symptoms and felt better much faster than those who did not.

What I do, is combine our honey with organic elderberries, cloves, -real- cinnamon and a dash of ginger.  Bottle it, refrigerate and drink.

Elderberry syrup is one of the most popular herbal cold remedies in Europe and with people in ‘the know’.  Elderberries have been used for centuries and is one of the most well documented herbal cold remedies.

Elderberry syrup can be taken by the teaspoon (my kids love it) every 2-3 hours while sick, or use it regularly in your food, such as on pancakes!  Elderberry syrup is VERY high bioflavonoids and contains antioxidants as well as potassium, beta carotene, calcium, phosphorus and vitamin C.  We pour it on my hot cereal, grapefruit and waffles.  Who knew you could add one of the best herbal cold remedies on your breakfast!

Honey used is SO important to the quality of the elderberry syrup.  If you are trying to boost your immune system, why bother consuming honey harvested with nasty chemicals and yes sometime yes treated with antibiotics!  Use RAW LOCAL HONEY harvested from a beekeeper with the heart of a teacher.  If the beekeeper is not willing to talk about their hives, then assume there is something they are hiding   My father-in-law is the worlds greatest beekeeper.  He has Geo thermal heat, drives a Prius  tends an organic garden, AND treats his bees with the same natural respect he does his home.  So we use ONLY raw local honey from our family hives.

{Honey and Lemon Sore Throat Remedy}

Thinly slice lemons and put into a jar add  a touch of sliced ginger.  Cover lemons and ginger with raw local honey.

Twist on the lid and  store in the refrigerator.   Over time it will turn into a ‘jelly’.  To use, take a spoon full and put it in a mug, pour boiling water over it, drink and be well.  This will last about 2-3 month in the fridge.

Elderberry Syrup is an amazing super food that is great for you an will help to keep you healthy as the cold winter weather settles in.  I found a great recipe that you can make at home.  We take a teaspoon of elderberry syrup a day.  When sick you can increase to about a teaspoon every hour.  Stay well.

According to Wikipedia, “In a placebo-controlled, double-blind study, elderberry was shown to be effective for treating Influenza B. People using the elderberry extract recovered much faster than those only on a placebo. The study was published in the Journal of Alternative Complementary Medicine.”

Elderberry Syrup Recipe:

Ingredients:

  • 1 cup fresh or 1/2 cup dried organic Elderberries (harvest blue or black, avoid poisonous reds)
  • 3 cups water
  • 1 cup raw local honey
  • 1 organic Cinnamon stick
  • 3 organic Cloves
  • Organic Ginger (optional)

Directions:

Place berries, water, and spices in a saucepan. Bring to a boil, reduce heat, and simmer for 30 minutes. Smash the berries to release remaining juice and strain the mixture. Allow liquid to cool and stir in honey. Will last for 2-3 months stored in the fridge.
